This healthy chicken recipe is one quick chicken recipe (once the marinade is on) that is an easy lunch recipe to prepare!
This does require some thinking ahead, as kebabs must be marinaded for at least 6 hours. We find making them a day before you need them works fine. Really quick to prepare once this is done.
What you will need:
1/2 cup lemon juice
1/4 cup vegetable oil
4 cloves of garlic, minced
4 tsp grainy mustard
12 each black peppercorns and whole cloves
2 each bay leaf and star anise
2 sprigs fresh rosemary (or 1 tsp dried)
1/2 tsp salt
2 lb boneless skinless chicken breasts
Preparation:
In large bowl, combine lemon juice, oil, garlic, mustard, peppercorns, cloves, bay leaf, star anise, rosemary and salt. This is your marinade.
Cut chicken into 1-1/2-inch (4 cm) chunks; add to bowl of marinade and toss to coat.
Cover and refrigerate for 6 hours, or make ahead and refrigerate up to 24 hours.
Divide chicken among 8 large metal or soaked wooden skewers.
Place kebabs on greased grill over medium-high heat.
Brush generously with marinade; discard any remaining marinade.
Close lid and grill, turning once, until no longer pink inside, about 10 minutes.
Serve with a fresh green salad or fruit salad.
