Carrot Soup
Carrot Soup with MintDelicious carrot soup recipe with fresh mint. The perfect starter for a romantic dinner recipe, or as an easy lunch recipe. Lovely colours and flavours. Be sure to use fresh mint for this, found in the produce section of the grocery store. 
What you will need: - 2 Tbsp butter or vegetable oil
- 1/2 medium onion, thinly sliced
- 3 cups sliced (1/2-inch thick) carrots (about 1 lb)
- 1 garlic clove, chopped
- 2 Tbsp flour
- 3 1/4 cups chicken or vegetable stock
- 1/2 cup orange juice
- 3 Tbsp chopped fresh mint
- Salt and freshly ground black pepper to taste
- 1/3 cup crumbled goat, feta, or grated aged white cheddar cheese
Preparation: Heat the oil in a pot set over medium heat. Add onions, carrots and garlic and cook until the vegetables are slightly softened, about 4 to 5 minutes. Mix in the flour. While stirring, very slowly mix in the stock. Mix in the orange juice and bring to a simmer. Simmer until carrots are very tender, about 10 to 15 minutes. Purée the soup with a hand-held immersion blender, or in a blender or food processor. Return the soup to a simmer. Thin with a bit more stock if you find it too thick. Stir in the mint, salt and pepper. If making ahead, cool the soup at this point and reheat the next day. Swirl in mint, ladle soup into bowls, sprinkle cheese in the center of each bowl and serve.
