This Belgian Waffle Recipe makes enough for four servings.
What you will need:
1 3/4 cups all-purpose flour
1 tbsp baking powder
1/4 tsp salt
2 eggs
1 3/4 cups milk
1/2 cup cooking oil (Canola works well)
What you do:
In a medium mixing bowl, stir together flour, baking powder, and salt.
Make a well in the center of dry mixture; set aside.
In another mixing bowl, beat whole eggs slightly.
Beat in milk and oil.
Add egg mixture all at once to dry mixture.
Whisk just till moistened (batter will be lumpy).
Preheat Waffle Iron (setting 4.5 works for us).
Pour batter in a circular motion to distribute about 3/4" from the outer edge of the iron.
Bake for about 4 to 4 1/2 minutes. Cooking time varies depending on your heat settings and the waffle iron you use.
It takes a bit of practice to make them perfectly browned, so watch the time and adjust cooking length accordingly. After a batch or two, you'll know how you like them cooked, and the amount of time it takes to get them that way!
If you would like to make extra waffles and save them for later, you can! After cooking, let them cook, then wrap individually in aluminum foil and freeze. They'll keep for about 2 months this way, and reheat very well.
